How to Cook Perfect Tulaipanji Rice
Quick Method: Rinse gently 2-3 times, soak 20-30 minutes (optional), use 1:1.5 rice to water ratio, bring to boil, reduce to low heat, cover and cook 12-15 minutes, rest 5 minutes, fluff gently and serve.
Stovetop: Use 1:1.5 ratio (1 cup rice to 1.5 cups water). Add rinsed rice and water to pot with pinch of salt. Bring to boil on high heat, reduce to lowest setting, cover with tight-fitting lid, cook 12-15 minutes without lifting lid, turn off heat and rest 5 minutes, fluff gently with fork.
Rice Cooker: Add rinsed rice and water in 1:1.5 ratio, add pinch of salt, close lid and press cook, rest 5 minutes after cooking, fluff and serve.
Pressure Cooker: Add rinsed rice and water (1:1.5 ratio), close lid without weight, cook on medium heat 5-6 minutes, let pressure release naturally, fluff and serve.
Traditional Bengali Khichuri Recipe
Ingredients: 1 cup Tulaipanji rice, 1/2 cup moong dal, 2 tbsp ghee, 1 tsp cumin seeds, 2 bay leaves, 1-inch cinnamon, 4-5 cloves, 1 tsp turmeric, 1 tsp ginger paste, 4 cups water, salt, vegetables (optional: cauliflower, peas, potatoes).
Method: Rinse rice and dal together, soak 20 minutes. Heat ghee, add cumin seeds, bay leaves, cinnamon, and cloves. Add ginger paste and sauté 30 seconds. Add drained rice and dal, sauté 2 minutes. Add turmeric, vegetables, water, and salt. Pressure cook for 2 whistles or simmer covered 20-25 minutes. Mash slightly for creamy texture. Serve hot with fried vegetables, papad, and pickle.
